Healthy appetites, soba noodles

I was shopping in Trader Joes and I came across this interesting package, I'm really having trouble coming up with ideas for delicious healthy meals, so this looked perfect!


It comes with a package of noodles, sauce mix, sesame oil and a sprinkle mixture of sesame seeds and seaweed, a healthy sized portion for around 4 people.

I stir fried some veggies in the sesame oil, added some marinaded tofu, and then prepared the noodles as per the package instructions. Tasty and filling! I was left with another 3 lunches for work, or a dinner for us on a weeknight, so it was cheap, cheerful, healthy and delicious!

I added some crunchy lettuce mixed with a little dressing that I whipped up with low fat mayonnaise, wasabi, honey and rice vinegar on the side.

Much as I'd love for Trader Joes to hand me free stuff, I actually went and paid for this, I just thought I'd mention it as many of us are trying to lose a little weight, and
looking for healthy, quick options.

that sounds so good... i wish we had trader joe's in canada... we always bring stuff back from there when we hit the states!! :)

Ah, I saw that too and was very curious, but seriously bummed when I saw that it wasn't vegan. It would have been so easy to make it so!

hi jw - you can get soba noodles for cheap at the asian markets, like zion (korean), or mitsuwa (japanese)... it just doesn't come with the other ingredients though.

I really need to check out mitsuwa and the other fun markets in Kearney Mesa, I'm so unfamiliar with that kind of food!

hi jw - ranch 99 is always fun. just don't go on weekends. parking is crazy! actually all of those markets are mega insane on the weekends. go on a weekday or at night! :)

you can get soba noodles so cheap at zion! or even at marukai market (just down the street from zion), which is also down the street from mitsuwa.

I LOVED this stuff ... Unfortunately, they seem to have stopped making/offering it. My local TJ's has not stocked in in almost 2 months. Waaah! D:
